survival guide

Sara is heading off to university in September. I´ve been trying to prepare her for life on her own in the big world. So far, I´ve been able to convince her that, no, there isn´t a magic elf that picks up her clothes off the floor, that milk doesn´t grow in the fridge, and that there is no golden goose laying euros at night.... Next on the list is the egg. It would be great if you could leave your favorite way to prepare eggs in the comments. You can assume that she can boil water... ;)

boiled, any which the way the egg, but naturally, NOT underdone. as a matter of fact i've also been dreaming of an egg benedicte, all my life already now, but couldn't tell you how it's done. i know spinach can be involved (?), but it's the hollandaise sauce that keeps me drooling. ah well, maybe your sara will find her way down that route...
well now, enjoy all that's coming!!!

Good luck to Sara! (I just love that pic of her and Coco.) Tell her that fried eggs are always good to eat before exams and long days of classes... you can make them in 5 minutes, and all you have to do is put some butter in a fry pan, crack the egg into it, and wait until it looks cooked. I survive on fried eggs :)

I love a good fried egg. A little butter in the pan and just as it is melted I crack the egg in the center. I wait for the sides of the eggs to begin pulling away from the pan and flip it over for just a minute. I like my centers a little runny to dip my toast in. Salt and pepper makes it perfection. I also like to use hard boiled eggs chopped and made into egg salad. A little mayo, dijon, salt, pepper, and celery. Yummy. I hope Sara has a blast, but then why wouldn't she this is the best time of her life. Have fun in Madrid this weekend, and Happy Mother's Day!

Milk growing in the fridge, I like that! Your daughter leaving you, reminds me on when my oldest daughter got married. The first few months she called me five (not exaggerated!) times how to make ice tea!
After 12 years I am copying recipes from her, lol.

Soft boiled egg: boil water, put an egg into the boiling water, cook for 4-5 minutes - presto. Good with toast.

My favorite way to prepare eggs is as follows:

1. preheat skillet and melt butter coating the bottom of the skillet
2. crack the egg and separate the white from the yolk (set the yolk aside)
3. cook the white until almost done
4. carefully set the yolk on top of the cooked egg white and cover the skillet with a lid for 2 min gently and barely cooking the yolk

I like my yolks barely cooked so they can ooze over veggies, rice, oats or just about anything else :)

My favorite ways to cook eggs involve 2 cheap items every uni student should have on hand:

-a non-stick frying pan -even a tiny one is sufficient (this is a confidence-building item every new cook should own!)
- an egg cooker

A frying pan for the obvious frying and scrambling of eggs (using a spoonful of water per egg makes the eggs fluffier if you scramble) and making omlettes (basically whatever's left in the fridge goes in the frying pan w/your egg).

An egg cooker is about 15-20 Euro; pick one that has the tiny 'trays' so you can also use it to steam veggies and poach eggs. I like to add enough water to the egg cooker for soft boiled eggs, but I often use it to make a batch of hard boiled eggs that I later toss in the fridge to use for snacks or slicing up on salads.

*a bonus item is a blender - not egg-related, but my parents gave me one my freshman year of college and it is now my favorite kitchen appliance! Mixing juice, plain yogurt, fresh and frozen fruit (add in that order) is another awesome way to consume your fruits (and veggies). You can also mix drinks for friends and make all of those cool cold soups that keep so long in the fridge for late night snacks. =)

An easy and fast alternative to boiled and pan eggs is pancake:
-beat an egg in a bowl
-mix with 140 ml milk (or sparkling water, if milk got bad during the night) and a pinch of salt
-then add 80g flour little by little and mix constantly to avoid lumps
-put some butter in the pan and fill in the runny dough in portions

For variety you may put some things on the pancake, when it's ready: sugar/honey, cinnamon, chocolate cream, marmelade, ice cream or, if you'd like it more hearty: cheese, salami
It's also possible to put apples or bananas or grated cheese directly on the dough, when you just have put it in the pan.

Eggs.... omelettes so you can mix in ham and cheese and bell peppers and more or less any leftovers you can find in the fridge!!

Wow, you must have mixed emotions about sending your daughter off to the UNI.I know I will,
ok
so about preparing eggs,
you will need a non-stick pan, some olive oil and any veggies, if you like veggies, to go with the eggs.
my favorite are scrambled eggs.

1. heat pan and pour some olive oil, and sautee your favorite veggies, (mine include, onions and red bell peppers) for a few minutes then add 1 or 2 eggs and mix well, in a few minutes you got yourself a meal!

I can imagine that's going to be a big change for you too! Maybe you have to buy her one of those basic-cooking-for-students-books :) I had a fellow student who only knew how to make pasta bolognese and he ate that his entire time in university!

i love the photo! here's an egg idea and it really is simple -

recipe
- cut a shape in the center of your bread. a heart is nice.
- melt 1 tbsp of butter in a non-stick skillet. i butter the bread so it browns evenly.
- cook both pieces about 3 minutes over a medium-low heat or until golden.
- with a spatula, flip each piece over. break the egg in the center of the cut out. season with salt & pepper. cover and cook for 2-3 minutes or until the egg is set.
- they say serve with love, which sounds like the best part and reminds me of the movie women on top with penelope cruz.
